Recipe: Coconut and chilli calamari with coriander mayo.

If you attended the Peterhead Seafood Festival 2022, you may have seen Paul Terris, Chef & NPD Manager, making coconut and chilli calamari with coriander mayo. Below we share the recipe from the day for you to try at home.

Method

"Fresh squid from the market was prepped and cut into rings and tentacles before being marinated in buttermilk, salt, chopped chilli's, desiccated coconut and chopped coriander and left for 20 minutes.

A simple dusting of 50% oo grade flour and 50% cornflour was prepared - this mixture of fine flours is excellent for achieving maximum crispness to the calamari. The marinaded squid is quickly dipped in the flour then deep fried at 180C for a few minutes until golden brown. What I like about preparing it this way is you get lovely chunks of chilli and coriander within the coating-its so visual!

On to the coriander mayo - 2 egg yolks, a healthy dollop of dijon, half a lemon juice and 300mls of oil topped up with 50ml of garlic oil and a handful of coriander blitzed for a good while provide the perfect dip for that crispy calamari. A squeeze of lime over the top and your ready to go!" – Paul Terris

Recipe: Poached lemon-sole with a champagne and smoked salmon butter sauce.

If you attended the Peterhead Seafood Festival 2022, you may have seen Kenny Smart, making poached lemon-sole with a champagne and smoked salmon butter sauce. Below we share the recipe from the day for you to try at home.

This a great dish to show off to your friends and family, serve 2 fillets of sole as a main or 1 as a starter. Serve with new potatoes and seasonal vegetable as a main or watercress for a starter.

For the sole

8 fillets of lemon-sole

2 slices lemon

1 bay leaf

Sprig lemon thyme

6 peppercorns

Water to cover fish

Large pinch of Maldon salt

For the sauce

1 medium shallot

300ml champagne

300ml light chicken stock

300ml double cream

50g really nice unsalted butter

100g diced smoked salmon

1 tsp of chives

1 tomato skin and seeds removed and diced small cubes

Rapeseed oil

Half lemon

Maldon salt

For the fish

Place the fish in shallow pan cover with water, add the lemon, thyme, bay leaf, salt and peppercorns. Cover loosely with greaseproof paper, place on a medium heat and bring to a gently simmer, cook for around 6-8 minutes depending on the thickness of the fish.

Remove from the heat and allow to sit in the liquid for 1 minute.

For the sauce

Heat a medium saucepan on a moderate heat, add 1 tbsp of rapeseed oil and the shallots. Gentle cook down the shallot for around 2-3 minutes, you want the shallots to soften and not colour. Add the champagne and reduce to 2/3, next add the stock and repeat. Add the cream and reduce by half. Turn the heat down and slowly whisk in the butter a little at a time, you want the butter to emulsify with the cream and not split, once all the butter has been incorporated, sieve the sauce into a clean pan and add the smoked salmon, tomato and chive. Check for seasoning and adjust with salt and a squeeze of lemon.

Remove the lemon-sole from the poaching liquid and season lightly with salt and a squeeze of lemon, place into a shallow bowl and spoon the sauce over.

To make the langoustine sauce, finely dice the shallot and place into the pan with the white wine and reduce until all the wine has evaporated then melt the butter and add the flour to make a roux and cook out, then add the warm bisque and milk a little at a time to create a sauce, then add the cayenne, mustard, parmesan and chopped langoustine tails & chives. Season.

Cut the tops from the gougers and pipe in the sauce, warm back through the oven before serving.

An introduction to the artist

“My name is Rebekah Middleton and I am an artist who lives in Mintlaw. I graduated from Gray's school of art in 2008 in Photographic and Electronic Media where I spent a lot of time looking at the impact of a space on people and how they interacted with a piece of art depending on the space and their ideas of reality. Since then I have largely changed my art practice and focus on drawing and painting - mostly portraits and landscapes - but with a continued fascination in how people perceive art and the representation of reality it portrays.”

The theme behind the public art project

Rediscover Peterhead set an overarching theme for the Public Art project. Which requests that all artwork must acknowledge Peterhead, whilst highlighting an environmental topic.

How the artists artwork acknowledges Peterhead

The dolphin within the artwork ties in with the strong history Peterhead has with the sea and its inhabitants.

How the artists artwork highlights an environmental topic

Through a gentle call to play, her work aims to remind its viewer of the option to have hope, over hopelessness when reflecting on the environmental crisis.

“We can have hope. We can believe in the power of imagination, creativity, and childlike curiosity to uncover innovative ideas, small or large, that can have a powerful impact for good. Both on our environment and our communities."

"As these spaces are public and also aim to inspire - to lean hard into the positivity of engagement, using a child interacting with bubbles as an analogy for coming at things without the hang-ups that ‘growing up’ can add."

"A gentle call to play. To imagine. To hope. To reach out and touch things and connect with our environment is something to be cherished and played with because, when we do, special things can happen."

Photo of Artist (Right) with Begg Shoes Manager (Left)

Artists thoughts on the public art project, and why they wanted to take part.

"I thoroughly enjoyed being a part of this ambitious project and meeting some of the diverse community in the process. There are some clear parallels between Peterhead and the town I grew up closest to and I can’t help but wonder what it would have meant to a young me if I hadn’t had to leave to find great pieces of public art. Art is powerful in all its forms but the accessibility of public art means that it can be enjoyed by all and for that all kudos is due to the team at Rediscover Peterhead for taking a risk to try something different."

An introduction to the artist

"Hi! I'm Craig Fisher (@plaguefisher on instagram) and i'm an artist based in Aberdeen. I moved to the North East, from Edinburgh when was18 to go to art school and haven't looked back. I'd like to think i've always been creative but my influences are drawn from riding BMX bikes, skate culture, cartoons and low brow, weird art. My "art career" took off when I ended up doing in house graphic design, illustration and mural work for Brewdog but now self employed under my business FISHER PAINT CO, I have the freedom to work with a broader range of clients and work on developing my own personal style."

As the first of hopefully many murals, they had their work cut out getting permission in place but there was forward momentum with the project from our initial contact. Peterhead town centre needs rejuvenation and I'm proud to be a small part of that!"

"Should also shout out to all of the locals who stopped for a chat, and local legend John for keeping a watchful eye through my painting process!!"
